Here's a very simple way to make pork tenderloin that is just melt-in-your-mouth good. We've had it many times and the whole family loves it.
Ingredients:
5 garlic cloves, finely minced or crushed
2 tbsp balsamic vinegar
2 1/2 tsp coarse salt
1/2 tsp freshly ground pepper
2 tbsp olive oil
2 pork tenderloins (about 1 1/4 pounds each)
Directions:
1. Stir together garlic, balsamic vinegar, salt, pepper, and olive oil.
2. Coat the tenderloin with the rub.
3. Let marinate for anywhere from 30 minutes up to 6 hours.
4. Sear the tenderloin on all 4 sides.
5. Grill until the internal temperature is about 160, rotating every 10 minutes.
6. Let it rest for 10 minutes before serving.
This has become a family favorite and is great when served with sour cream. The recipe was from the Kitchen Confidante website.
When grilling the tenderloin, I seared it on high heat on the grill, then moved the tenderloin pieces to the top rack in the back of the grill. Then I left only the front burner on to cook it indirectly. It took longer, but was extremely tender and juicy.

Smothered Chicken
This is a very good meal that does take a bit of effort to put together, but is really worth it. It's a bit heavy on the dairy, but oh-so-good. There are 3 parts to the recipe, so I'll try my best to get everything in the right order. Make sure to read through the entire recipe and portion out everything before starting.
Ingredients:
Chicken:
6 boneless skinless chicken breasts
10 slices mozzarella cheese
1 tbsp garlic powder
1 tbsp seasoned salt
1 tsp pepper
Creamed Spinach:
1 large bag spinach leaves
4 oz cream cheese
1/4 cup shredded Parmesan cheese
2 cloves garlic, minced
3 tbsp onion, minced
2 tbsp olive oil
Sauteed Mushrooms:
8 oz mushrooms, sliced
1/2 stick butter
1/2 cup white wine
2 cloves garlic, minced
salt and pepper to taste
Directions:
1. Preheat Oven to 350
2. Mix the garlic powder, seasoned salt, and pepper together and coat the chicken.
3. Bake the chicken for 16 minutes
4. While the chicken is baking, heat the 2 tbsp of oil for the creamed spinach in a large pan over medium-high heat.
5. When the oil is hot, add the onions and saute for 2-3 minutes
6. When the onions are sauteed, add the spinach and garlic and cook until cooked through. The spinach will reduce to a small amount.
7. When cooked through, add the cream cheese and shredded Parmesan cheese and stir until melted.
8. Set aside the the creamed spinach.
9. In a fresh skillet, melt the butter and oil.
10. Add the mushrooms and cook until browned all over.
11. Add the white wine to deglaze the pan.
12. Add in the garlic, salt, and pepper.
13. Cook until most of the wine is cooked off.
14. At this time, the chicken should be done baking.
15. Remove the chicken from the oven and turn over in the pan.
16. Add the creamed spinach to the top of the chicken breasts.
17. Add the sauteed mushrooms on top of the creamed spinach.
18. Place 2 pieces of the mozzarella cheese on top of each breast.
19. Cook another 12-14 minutes or until the cheese is browned and the chicken is done.
That's it. A lot of steps, but it was very yummy. We ended up using the broiler to get the cheese a bit browner at the end, but you may not need to.

Loaded Cauliflower Casserole
Here's a wonderful cauliflower casserole that will meet your baked potato desires. It is delicious.
Ingredients:
2 lb cauliflower florets
8 oz shredded sharp cheddar cheese, divided 6 oz and 2 oz
8 oz shredded Monterrey jack cheese, divided 6 oz and 2 oz
8 oz cream cheese, softened
4 tbsp heavy cream
1 cup green onions, chopped
2 clove garlic, grated
salt and pepper to taste
Directions:
1. Steam cauliflower until tender.
2. Soften cream cheese and mix with the heavy cream.
3. Mix 6 oz of cheddar and 6 oz of jack cheese into the softened cream cheese.
4. Stir in onions, garlic, salt, and pepper.
5. Drain cauliflower, smash with potato masher, and then add in the cheese mixture and mix all together.
6. Pour into 2-3 qt dish and sprinkle on the last of the cheddar and jack cheese.
7. Cover with foil and bake 25 minute at 350.
8. Remove foil and bake until cheese is bubbly and brown on top.
This is best served like loaded mashed potatoes and topped with potato toppings like bacon, sour cream, butter, etc. It is a wonderful side dish for just about any meal.
When we made ours, we put the bacon in the cheese mixture, but it made it kind of soggy, so we recommend adding to the top like bacon bits on mashed potatoes.
This recipe is based on one from Louanne's Kitchen.

Chicken Fricassee
This works great as a normal meal or as leftovers/served the next day. Letting it sit for a while will let the flavors blend and make it even more tasty.
Ingredients:
3 celery stalks
1 carrot
2 tomatoes
2 leeks
1/2 head of cabbage
4 boneless, skinless chicken breasts
1/2 cup dry white wine
2 garlic cloves, crushed
2 tsp chopped tarragon
1 tsp celery seed
1 bay leaf
3 cans (14.5 oz) chicken broth
salt and pepper to taste
Directions:
1. Prepare the veggies. Cut the celery and carrot into 1" pieces; quarter, skin, and seed the tomatoes; wash and trim the leeks, removing the tough green end, split them, then cut into 1/2" pieces; chunk the cabbage into 4-6 pieces.
2. Grease a 5 qt pan with cooking spray and lightly brown the chicken breasts on each side. Season the chicken with salt and pepper before browning. We used whole breasts this time but will try them with each breast cut into 2-3 pieces next time.
3. Add the leeks, celery, garlic and wine and cook for 5 minutes
4. Add everything else, bring to a boil over high heat, then reduce to low and cook, covered, for 30 minutes or until vegetables are done, seasoning with salt and pepper to taste.
5. Serve in soup bowls and garnish with parsley, cheese, or anything else you would like.
This recipe was based on one in the 501 Recipes for LC Life book.

1 tbsp water
salt to taste
Directions:
1. Put cilantro, parsley, onion, and garlic in a food processor and process until finely chopped.
2. Add the olive oil, vinegar, and water and process until it is about like a thick paste.
3. Cut the pork tenderloins in half and then crosswise into 1" chunks.
4. Toss the salt on the tenderloin while still on the cutting board to season well.
5. Mix 2/3 of the salsa into the pork tenderloin so the pieces are covered.
6. Fill up 6 or so skewers of the tenderloin grill about 6 minutes per side. Use the rest of the salsa to cover while grilling.

Chicken Avocado Soup
A great recipe my wife found on Pinterest that we had to try. It was fantastic. Needs a bit of a kick of heat so may had some hot pepper spices next time, but was still wonderful. We did tweak it a bit and the link to the original is at the bottom.
Ingredients:
7 cups chicken stock
3 whole chicken breasts, cooked and shredded
2 tomatoes, diced
3 cloves garlic, minced
2 cups scallions, chopped
3 ripe avocados, diced
1/2 cup cilantro
4 lime wedges
2 tsp olive oil
salt/pepper - to taste
cumin - pinch
chipotle chili powder - pinch
Directions:
1. In large pot, boil the chicken breasts in the chicken stock for about 15 minutes until the chicken breasts are cooked.
2. Remove chicken breasts and shred with a fork and pour out stock and set aside.
3. Add the olive oil to the pot and heat over medium heat, adding in 1/2 of the scallions and garlic.
4. Saute about 2 minutes, add tomatoes, and saute another minute.
5. Add chicken stock, cumin, salt, pepper, and chili powder and bring to a boil.
6. Reduce heat and simmer on low for about 15 minutes.
7. In 6 bowls, fill equally with some chicken, avocado, the rest of the scallions, and the cilantro.
8. Ladle 1 cup chicken stock over the chicken and serve with a lime wedge*.
*Note: We forgot about the lime wedges and ended up topping ours with sour cream and cheddar cheese. Sooo yummy.

Gina's White BBQ Sauce
Here is an excellent white BBQ sauce that I got from a friend who's name is Gina, hence, the name: Gina's White BBQ Sauce.
Ingredients:
1 cup mayo
3 tbsp red wine vinegar
1 tbsp lemon juice
1 tbsp Worcestershire sauce
1 1/2 tbsp splenda
1 tbsp salt
1 tbsp pepper
1/2 tbsp rosemary
1/2 tbsp thyme
1 tbsp garlic
Directions:
1. Mix everything together.
2. Pour over whatever you want to cook and let marinade overnight or all day long.
This is great for food that will be baked, broiled, or grilled. Goes good on chicken, beef, or pork. It was very good this time, but I will make a few tweaks next time. I cut out the splenda, reduce the thyme and rosemary in half and then add in a few tbsp of Parmesan cheese. Have to make it more "Wisconsin".
In the pictures, below, I have used it to marinade a pork chop that we broiled. In the background on the plate, you can see the Wice A Woni topped with Butter-Browned Almonds.
Ingredients:
1 cup mayo
3 tbsp red wine vinegar
1 tbsp lemon juice
1 tbsp Worcestershire sauce
1 1/2 tbsp splenda
1 tbsp salt
1 tbsp pepper
1/2 tbsp rosemary
1/2 tbsp thyme
1 tbsp garlic
Directions:
1. Mix everything together.
2. Pour over whatever you want to cook and let marinade overnight or all day long.

Wice A Woni
Fantastic side that tastes very close to Rice A Roni, but is done with cauliflower instead. The topping of Butter-Browned Almonds makes it even better.
Ingredients:
1 head cauliflower
2 tbsp lard
1 tbsp coconut oil
1 medium onion
3 cloves garlic, minced
1 tsp seasoning salt, divided
2 tsp chicken bullion granules
1 tsp lemon pepper
1/2 tsp celery seeds
1/4 tsp dried thyme
2 tbsp dried parsley flakes
1/8 tsp paprika
Directions:
1. Cut cauliflower into small chunks to fit into a food processor. Pulse until it is the consistency of rice. You can also use a hand grater to accomplish the same thing.
2. Melt lard and coconut oil over medium heat in large frying pan and add in the onion, garlic, and 1/2 of the seasoning salt. Cook until the onion and garlic are lightly browned.
3. Add the remaining ingredients to the pan and stir well to fully mix everything together.
4. Cook uncovered for another 5 minutes or so until the cauliflower is browned or heated through, being sure to stir frequently.
5. Serve with Butter-Browned Almonds as a garnish.
This is a very good side dish and the kids loved it and so did we. We will probably cut down the thyme in it next time as we don't like it that flavor very much, but it was still very good.

Easy Beef and Green Beans
Very quick and easy all-in-one meal. Have made it a few times and we love it.
Ingredients:
1 1/2 pounds ground beef
3 cloves garlic, minced
2 cups celery, chopped
1 (16 oz) bag of frozen green beans (fresh could be used as well)
1 cup mushrooms, sliced
1 tsp seasoning salt (This home-made seasoned salt is great)
1/2 tsp lemon pepper
2 tbsp Bragg Liquid Aminos
1 tsp sesame oil
1/4 tsp hot chili oil (or more if you like it spicy)
Directions.
1. Brown the ground beef and garlic over medium heat.
2. Add in the celery, beans, and mushrooms and cook until they are tender. Usually between 15 and 20 minutes.
3. Add remaining ingredients to the pan, mix together and serve while warm.
There are also lots of options you can do to finish it off if you want. I add Paremsan cheese on top of mine and my wife likes Ranch dressing on hers.
This recipe is from the Extreme LC Meals on the Go cookbook.

Chipotle Burgers
Here's a burger that takes a bit of work making the different sauces, but it is worth it. Very good. A bit spicy, but you can always back down on the amount of chipotle to meet your needs.
There are 3 different parts, so I'll go through them one at a time.
Dana's No-Sugar Ketchup
Ingredients:
6 oz tomato paste
2/3 cup cider vinegar
1/3 cup water
1/3 cup Splenda (optional)
2 tbsp minced onion
2 cloves garlic
1 tsp salt
1/8 tsp ground allspice
1/8 tsp ground cloves
1/8 tsp pepper
Directions:
1. Put everything in a blender and run until onion disappears. Store in a container w/tight lid in the fridge.
Chipotle Sauce
Ingredients:
3/4 cup mayo
3 chipotle chilies canned in adobo
2 tbsp Dana's No-Sugar Ketchup
Directions:
1. Measure mayo and ketchup into a bowl.
2. Chop up the chipotles quite fine and mix into mayo/ketchup sauce.
Chipotle Burgers
Ingredients:
2 pounds ground beef
6 chipotle chilies canned in adobo sauce
1/2 cup chopped cilantro
2 cloves garlic, crushed
1/4 cup minced onion
1/2 tsp salt
6 oz Monterrey Jack cheese, sliced
Directions:
1. Mix everything but the cheese in a big bowl and form into 6 big burgers (or however many you want).
2. Let the burgers chill for an hour in the fridge (it makes them easier to handle).
3. Grill on medium heat until done (approx 7-10 minutes per side).
4. Put on the cheese to let melt and then serve with the chipotle sauce on top.
This recipe was from Dana Carpender's LC Barbecue book.

Steakhouse Southwestern Steak with Guacamole
So, what do you do when you have some nice steaks ready to grill and it starts raining outside? Well, you make them inside. Here's a very simple way to make some excellent steaks inside in the oven (no, not baked steaks) with a nice guacamole to serve with it.
Steak Ingredients:
4 well marbled steaks 1" to 1 1/2" thick (Rib-Eye, NY Strip, etc)
Olive oil
Salt
Black Pepper
Garlic Powder
Blackened Seasoning
Cayenne Pepper
Steak Directions:
Take the steaks and put them on a greased broiler pan.
2. Brush on or rub in the olive oil on both sides.
3. Season the steaks as you desire. I like the combination of flavors as listed above. Use what you like.
4. Put the broiler rack as close to the broiler as you can so when you put the steaks in, they are 1/2" or less from the top broiler. I put my broiler pan on top of a second one to get it close enough.
5. Broil 1" steak on high for 4 minutes for a medium steak. More time for more well done, less time for rare. Also, take into account the thickness of the steak. More time for thicker ones, less time for thinner ones. Keep the oven door cracked open a bit when broiling as it will smoke.
6. When the first side is done, flip the steaks, touch up the oil and seasoning if you wish, and cook for 4 more minutes.
7. Take out the steak and let rest for 5-10 minutes before cutting.
Guacamole Ingredients:
4 whole, ripe Avocados
2 tbsp medium sweet onion or 1 medium scallion, diced very small
3 cloves garlic, minced
1 tbsp of lime juice
Guacamole Directions:
1. Peel and pit the avocados and put them in a large mixing bowl.
2. Smash up with a fork.
3. Add in the rest of the ingredients.
4. Mix well.
Serve the steak with Guacamole on top and you have a wonderful meal.
This recipe is based on one from Dana Carpenders 501 LC Recipe book.

Green Salsa Chicken Breasts
Here's an excellent meal that tastes a bit like a combination of chicken taco salad and a kind of soup. Very simple yet tasty.
Ingredients:
4 boneless skinless chicken breasts
2-3 tbsp butter/oil
2 2/3 cups green salsa
1 cup chicken stock
3 garlic cloves, finely diced
3 tbsp chopped fresh cilantro
1/2 fresh green chili or other pepper
1/2 tsp ground cumin
1 cup sour cream
romaine lettuce leaves, shredded
3-5 scallions, finely chopped
coarsely chopped cilantro
salt/pepper to taste
Directions:
1. Season the chicken w/salt and pepper.
2. Melt butter and/or oil in a large skillet and brown the chicken breasts. Cook until they are browned, but not cooked through as they will finish cooking later in the sauce.
3. Remove chicken from the pan and reserve.
4. Place salsa, stock, garlic, cilantro, chili (or hot peppers), and cumin in a pan and bring to a boil. Quickly reduce to a low simmer and add the chicken back in, spooning the sauce over the chicken.
5. Serve the chicken on a bed of lettuce and topped with sour cream, scallions, and cilantro if desired.
I changed it up a bit and put the scallions in the sauce and didn't top with any scallions or cilantro. Instead, I just topped with sour cream, some chipotle seasoning, mozzarella cheese, and some green Tabasco sauce. The sauce doesn't have much kick, so it could use a bit more.
Recipe was from the Greatest Ever LC Recipe Book. (It's not actually the greatest ever, that's just the name.) :o)

Grilled Chicken with Marinade
I know this chicken is a bit close to the Greek Roasted chicken recipe, but I tweaked it a bit and enjoyed the change.
Ingredients:
1 Cut-up Chicken (or whatever you want to grill)
1/2 cup olive oil
1/4 cup lime juice
1 tsp Balsamic Vinegar
1 tsp black pepper
1 tsp salt
2 cloves garlic
Directions:
1. Mix marinade ingredients and put in a 1 gallon zip-lock bag with the chicken.
2. Let marinade as long as you want. I prefer letting it go overnight.
3. Grill the chicken and enjoy.
I've added a salad and cottage cheese to round out the meal.

Seriously Spicy Citrus Chicken
Wow, here's a nice simple dish that is very tasty and has a huge kick. Unless you like lots of heat, cut the red pepper flakes down to probably 1/3 of what they call for. It will still be spicy, but won't melt your mouth.
Ingredients:
1 1/2 pounds boneless, skinless chicken breast
1/4 cup olive oil
1/2 cup lime juice
1/4 cup lemon juice
4 tsp red pepper flakes
4 tsp garlic, minced
4 tsp grated gingerroot
1/4 cup Splenda (skipped this ingredient)
4 scallions, finely diced
2 tbsp chopped cilantro
Directions:
1. Cut chicken into 4 servings (or however many you are making) and saute in the olive oil over medium-high heat with a tilted lid.
2. While Sauteing, mix the lime juice, lemon juice, red pepper flakes, garlic, gingerroot, and Splenda (if using).
3. After the chicken has browned (about 4-5 minutes per side), add the mixture to the skillet, turning the chicken to coat both sides.
4. Saute for another 2-3 minutes per side or until chicken is done.
5. Place chicken on plates, pour mixture over top of chicken and scatter scallions and cilantro over each portion.

Garlic & Lime Pork Chops
A wonderful marinade for pork chops that give them a bit of a kick and some very good flavor. We used some very thin pork chops and it was ready in about 5 minutes.
Ingredients:
6 cloves garlic, crushed
2 tbsp soy sauce (Braggs Liquid Aminos)
2 tbsp fresh gingerroot, peeled and grated
2 tbsp Dijon Mustard
1/2 cup lime juice
4 oz olive oil
1/2 hot chili pepper, finely diced
8 pork chops
Directions:
1. Combine the garlic, Braggs (soy sauce), gingerroot,Dijon mustard, lime juice, oil, and chili pepper into a zip lock bag.
2. Add pork chops and let marinade up to a day. The longer the better.
3. Remove Pork Chops and grill (or broil).
4. If you want, you can boil the marinade and use as a sauce on top, but ours was wonderful just off the grill.
This recipe was based off of one in Gillespe's 501 Recipes for LC Life cookbook.

Pork Chops and Gorgonzola Butter
Wow. This is a very simple recipe, but the Gorgonzola butter is some of the best butter I have ever had. It would go amazing on any kind of pork, beef, or lamb steak or chop. Just some great flavor.
This recipe is based on one in Gillespie's 501 Recipe book, but is quite different. I used pork chops instead of veal, broiled instead of baked, and Gorgonzola instead of Roquefort cheese. I also changed the ratios up a bit. I'm putting what I used instead of what's in the book.
Ingredients:
8 oz butter (melted)
4 oz Gorgonzola cheese crumbled
1 clove garlic, crushed
Few dashes of Hot Sauce (Tabasco Habanero is what we used)
1/2 bunch parsley, leaves only
8 (4 oz) boneless pork chops
Olive Oil
Seasonings to taste on the pork chops
Butter Directions:
1. Blanch the parsley leaves in boiling water for 5 seconds. Then let refresh in cold water. Dry and then chop coarsely. (I don't know what this step does, but I did it. If anyone can explain, that would be great).
2. Melt butter a bit so it is super soft and and put in the garlic, few drops of the hot sauce (to taste), and 2 oz of the Gorgonzola.
3. Blend until smooth.
4. Mix in the parsley and the rest of the Gorgonzola.
5. I used my blender to re-mix everything. That made the parsley much smaller and the butter a bit smoother, but you don't need to do that, you can just mix by hand.
6. Put in the refrigerator to cool and harden.
Pork Chop Directions:
1. Brush the pork chops with oil on both sides.
2. Season both sides with your choice of seasoning. (My favorite blend is black pepper, garlic powder, seasoned salt, and blackened seasoning. It makes a wonderful combination).
3. Broil on high for about 5-7 minutes per side.
4. Take out the pork chops and let rest for a few minutes.
Serving:
1. Take the pork chops and serve on a plate.
2. Take the Gorgonzola butter and slice off some for each pork chop.
3. Enjoy!!!!
